You can also make delicious enchiladas in your pressure cooker by cooking vegetables and chicken. It doesn’t need any pre-cooking and the dish can be made in just about 20 minutes, ensuring that it will be family favorite in your household.

Ingredients

  • 2 ancho chillies
  • 2 pounds chicken thighs
  • 1 jalapeno pepper
  • 1 pound tomatoes
  • 1 onion
  • 4 garlic cloves
  • 2 canned chipotle chilies
  • 1 bay leaf
  • 1 tsp cumin
  • 2 tsp dried oregano
  • Kosher salt
  • ¼ cup fresh cilantro leaves
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • ½ cup chicken stock
  • ½ tsp coriander seed

Preparation

  1. Trim the chilies and put them in the microwave for 15 seconds, then cut them into slices. Now add the chilies with the tomatoes, chicken, chipotle peppers, bay leaf, cumin, coriander, chicken stock, jalapeno, onion, garlic, and oregano in a pressure cooker. Add salt and pepper and stir until you create a nice mixture for 15 minutes.
  2. Now take let it cool, and take the chicken out. Discard the bay leave, and transfer the rest of the ingredients into a blender. Add lime juice and soy sauce, and blend slowly to create a smooth sauce. Now add in salt to season, and transfer it into a bowl.
  3. Now shred the chicken properly and season with salt and pepper. Place them in enchiladas and serve immediately.
