Another gentle way to cook fish it to poach it. It won’t lose any of its delicious taste.
Preparation
- Use a pan big enough to lay each piece of fish completely flat
- Pour in enough liquid to cover the fish (we suggest chicken or vegetable stock)
- Bring the liquid to a simmer, and keep it there.
- The liquid should simmer rather than bubble. Turn the temperature down if you see it bubbling.
