Ingredients
- 1lb ground meat
- 1 1/2 cups brown rice
- 4 cups finely chopped veggies (carrots, sweet potatoes)
- 5 cups chicken broth
Preparation
- Fry the meat until it’s browned through.
- Add rice and mix well.
- Add 3 cups of the broth. Bring to a boil and simmer gently for five minutes.
- Add veggies and remaining broth, simmer very gently for about 20 minutes, until broth is absorbed. Add a little more broth if all the liquid cooks off.
- Cool and serve, or freeze for later.
