Preparation

  1. Rub the fish with spices, perhaps chopped herbs, ginger, garlic, or chile peppers to infuse with flavor while it cooks.
  2. Use a steamer with enough room for each piece of fish to lie completely flat
  3. Pour about 1½ inches of water into the pan.
  4. Place the steamer over the water, cover the pot, and bring the water to a boil.
  5. Begin checking the fish after 10 minutes to make sure it’s cooked all the way through
