This combination of white bean chili and turkey is totally divine and a new take on the traditional liquid soup. This soup recipe will make you get multiple refills. This soup is also quite convenient for those who don’t want to get into too much cooking on a lazy winter night.

Ingredients

  • 8 lime wedges (optional)
  • 4 cups fat-free, less-sodium chicken broth
  • 3 15.8-ounce cans Great Northern beans, rinsed and drained
  • 3 cups chopped cooked turkey
  • 2 tablespoons fresh lime juice
  • 2 cups diced yellow onion
  • 1/3 cup chopped fresh cilantro
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup diced seeded plum tomato
  • 1 teaspoon dried oregano
  • 1 tablespoon minced garlic
  • 1 tablespoon canola oil
  • 1 1/2 teaspoons ground cumin
  • 1 1/2 tablespoons chili powder

Preparation

  1. In a large pan, heat oil over medium-high heat and add onion.
  2. Sauté the onion until tender and golden.
  3. Now add garlic, chili powder, cumin, and sauté for 2 more minutes.
  4. Add beans and oregano to the pan and cook for 30 seconds.
  5. Now add broth to the pan and let it cook for 20 minutes.
  6. Add 2 cups of bean mixture in a blender and blend until smooth.
  7. Add this pureed mixture to the pan and add turkey.
  8. Cook for 5 more minutes or until the mixture is thoroughly heated.
  9. Remove the pan from heat and add chopped cilantro, salt, lime juice, diced tomato, and pepper into the soup.
  10. Garnish the soup with lime wedges and serve hot.
