Watermelon popsicles made from real watermelon and fresh kiwi are the ultimate summer treat.
Ingredients
- 19 oz cubed seedless watermelon (about 3 1/2 cups)
- 5 1/2 tablespoons granulated sugar, divided
- 1 tablespoon fresh lemon juice
- 1/2 cup canned coconut milk, shaken
- 6 medium kiwi fruits
- 1 tablespoon mini chocolate chips
Preparation
- Add watermelon, 2 Tbsp granulated sugar and lemon juice to a blender and blend until well pureed, then skim off foam.
- Pour mixture into 10 popsicles molds, filling each about ⅔ of the way full.
- Sprinkle the chocolate chips over tops, then place lids on molds and insert sticks. Freeze for 3 1/2 hours.
- During last 30 minutes of popsicles freezing, whisk together coconut milk with 1 1/2 Tbsp sugar until sugar has dissolved, then chill 30 minutes.
- Add chilled coconut milk to popsicles and return to freezer, uncovered.
- Chill for 45 minutes.
- Puree kiwi flash with remaining granulated sugar and freeze for 2 to 3 hours.
