Preparation

  • Use a pan big enough to lay each piece of fish completely flat
  • Pour in enough liquid to cover the fish (we suggest chicken or vegetable stock)
  • Bring the liquid to a simmer, and keep it there.
  • The liquid should simmer rather than bubble. Turn the temperature down if you see it bubbling.
