This dish is so full of flavors and colors. The best part is that it is really easy to prepare and you are free to add or eliminate vegetable mix as per your preference. Season with aromatic herb flavors for the delicious flavors.

Ingredients

  • 2 medium-sized red bell peppers, diced
  • Butternut squash (cubed), 2 cups
  • 1 sweet potato, peeled and diced
  • 1 medium-sized red onion, quartered
  • 3 medium-sized gold potatoes, cubed
  • Olive oil, ¼ cup
  • Fresh rosemary (chopped), 2 tbsp
  • Fresh thyme (chopped), 1 tbsp
  • Ground black pepper, to taste
  • Kosher salt, to taste
  • Balsamic vinegar, 2 tbsp
  • Fresh parsley (chopped), 2 tbsp

Preparation

  1. Set the oven to preheat at 475 degrees F.
  2. In a large mixing bowl, stir sweet potato, bell pepper, squash, potatoes, and sweet potato together to combine. Separate quartered onion slices and add them to the vegetable mix.
  3. In another bowl, combine rosemary, thyme, olive oil, pepper, salt, and vinegar. Add to the vegetables and toss until seasoned. Transfer to a prepared roasting pan.
  4. Set to roast for 35-40 minutes, stirring frequently. Cook until vegetables are browned and cooked through. Transfer to a serving platter and garnish with parsley.
  5. Serve immediately and enjoy the warm, roasted veggies.
