The classic, super-rich blend of egg and bacon served in this unique Italian pasta recipe is savory for taste buds. The amazing recipe is great for serving to children and adults alike. The recipe can be served as a main course but can also be thoroughly enjoyed as a brunch option. The delicate flavors will entice your taste buds like no other pasta recipe.

Ingredients

  • Spaghetti, 1 lb
  • Olive oil, 2 tbsp
  • Bacon (diced), 8 slices
  • 1 medium-sized onion, chopped
  • Garlic (minced), 1 tsp
  • 4 medium-sized eggs
  • Dry white wine, ¼ cup
  • Parmesan cheese (grated), ½ cup
  • Fresh parsley (chopped), 2 tbsp
  • Salt, a pinch
  • Black pepper, to taste

Preparation

  1. Prepare spaghetti by boiling salted water and cooking pasta spaghetti until tender. Drain and rinse through cold water. Add 1 tbsp olive oil and toss. Set aside.
  2. Place a large skillet over low-med heat. Add chopped bacon and cook until crispy. When done, remove from the skillet and drain using paper towels.
  3. Reserve bacon fat and add the remaining 1 tbsp olive oil. Heat and add onion. Cook for 2 minutes until onions are tender and translucent. Add garlic and continue cooking for another minute.
  4. Add back cooked baked and spaghetti. Toss and coat well. If it gets too dry, feel free to add more oil. Add beaten eggs to the skillet and cook. Use a large folk to constantly stir and let the eggs set. Add parmesan cheese next and toss to mix everything well.
  5. Season with salt and pepper and don’t forget that parmesan and bacon are already salty.
  6. Top with chopped parsley and sprinkle more parmesan cheese on the top.
  7. Serve immediately and enjoy!
