Ingredients

Turkey Breast:

  1. White pepper
  2. Salt
  3. 4 tbsp of butter
  4. 4 leaves of sage
  5. 2 cloves garlic, chopped
  6. 1 rosemary sprig (stripped and chopped)
  7. 1 4-lb turkey breast (cut in half)

Turkey Legs:

  1. White pepper
  2. Salt
  3. Maple syrup for garnish
  4. 4 tbsp of butter
  5. 4 leaves of sage
  6. 2 garlic cloves (chopped)
  7. 2 2-lbs turkey legs (thigh attached)
  8. 1 rosemary sprig (stripped and chopped)

Preparation

  1. Rub turkey breast with white pepper and salt
  2. Bag them and use a sous vide machine to seal them and cook them for 140 degrees Fahrenheit for 2 hours and 30 minutes
  3. Take out the turkey breast and roast it in a pan with sage, butter, rosemary, and garlic
  4. Rub turkey leg with white pepper and salt
  5. Bag them and use a sous vide machine to seal them and cook them for 167 degrees Fahrenheit for 6 hours minutes
  6. Take out the turkey legs and roast them in a pan with sage, butter, rosemary, and garlic
  7. Serve
