Butternut squash beef stew will make you forget all the other stews you have cooked before. Surprisingly, the combination of butternut squash with beef is quite appetizing, but don’t take our word for it.

Ingredients

  1. Crusty bread
  2. 3 tbsp of olive oil
  3. 3 cups of beef broth
  4. 2 tbsp of flat-leaf parsley (chopped)
  5. 2 tbsp of all-purpose flour
  6. 2 lbs. of stew beef (sliced into 2-inch cubes)
  7. 2 garlic cloves (chopped)
  8. 1/4 cup of sun-dried tomatoes (chopped)
  9. 1/2 tsp of salt
  10. 1/2 tsp of black pepper
  11. 1 tbsp of thyme (chopped)
  12. 1 tbsp of rosemary (minced)
  13. 1 onion (peeled and chopped)
  14. 1 lb of butternut squash (trimmed and sliced into 2-inch cubes)
  15. 1 cup of Marsala wine

Preparation

  1. Add 3 tbsp of olive oil into a saucepan and place it over medium heat.
  2. Include garlic, onions, thyme, rosemary, and sauté it for about 2 minutes.
  3. In a bowl, add salt, black pepper, flour, beef, and toss to combine.
  4. Increase the heat to medium-high heat, add beef into the saucepan, and cook for 5 minutes.
  5. Add wine and use a wooden spoon to loosen the brown bits.
  6. Include the butternut squash, tomatoes, and mix to combine.
  7. Include beef broth to cover the squash and the beef, and bring to a boil over high heat.
  8. Decrease the heat to low, cover it, and let it simmer for about an hour.
  9. Add black pepper and salt to taste in the stew.
  10. Garnish it with parsley and serve it with bread.
