Frittatas are one of the most well liked breakfast items. What sets this recipe apart is that it is Greek but with a potato twist. Once you try it, you will want to make it every Sunday! Here is what you need to do.

Ingredients

  • Boiled potatoes, ½ cup
  • Eggs, 10
  • Baby spinach, 1 cup
  • Scallions (sliced), 4
  • Cherry tomatoes (halved), 1 cup
  • Olive oil, 3 tbsp
  • Feta cheese (crumbled), 1 ½ cup
  • Black pepper, 1 tsp
  • Salt, 2 tsp

Directions

  1. Preheat oven to 350 degrees F. oil a casserole dish and place in the oven for 3-5 minutes.
  2. Whisk eggs, along with salt and pepper. Once light and fluffy, add scallions, spinach and tomatoes. Mix briskly. Then add in the potatoes and Feta. Be sure to fold gently.
  3. Take out the casserole dish from the oven and pour the egg mixture into it. Let bake for around 20-25 minutes or until a knife comes out clean. The top of the frittata will turn golden.
  4. Serve as soon as it is out of the oven!
