  • Salt and pepper, to taste
  • 6 hard boiled eggs
  • 2 teaspoons curry powder
  • 2 cloves roasted garlic
  • 1/4 cup mayonnaise
  • 1/2 red bell pepper, seeded and finely diced
  • 1 stalk celery, finely diced
  • 1 heaping teaspoon Dijon mustard
  • 1 ciabatta, sliced in thirds and halved


  • Mash eggs in a large bowl using a fork.
  • Add diced red pepper and celery into the bowl.
  • Now take another bowl and combine the roasted garlic, mustard, curry powder, mayonnaise, salt and pepper.
  • Add this mayonnaise mixture to the bowl with boiled eggs.
