5) Chicken Served With Mushroom Sauce           (5 of 6)





  1. 4 chicken breast (halved, skinless, and boneless)
  2. 2 tsp of canola oil
  3. 2 tbsp of butter
  4. 2 garlic cloves (minced)
  5. 1 tsp of thyme (minced)
  6. 1 packet of sliced mushrooms
  7. 1/2 tsp of salt (divided)
  8. 1/2 cup of dry white wine
  9. 1 1/2 tsp of all-purpose flour
  10. 1/4 tsp of black pepper
  11. 1/4 cup of shallots (chopped)
  12. 3/4 cup of chicken broth (fat-free and low-sodium)


  1. Wrap the chicken breast in plastic wrap.
  2. Use a mallet to pound the chicken breast into 1/2-inch thickness.
  3. Pour canola oil into a skillet and heat it over medium-high heat.
  4. Sprinkle 1/4 tsp of black pepper and salt onto the chicken breast.
  5. Add the chicken breast into the pan, cooking each side for about 3 minutes.
  6. Place the chicken into a serving dish and put it aside.
  7. Put mushrooms and shallots into a pan, and sauté for about 4 minutes, stirring occasionally.
  8. Include garlic and sauté for another minute, stirring continually.
  9. Include wine, scrape the pan to loosen the bits, and bring it to a boil.
  10. Cook the wine, until it evaporates.
  11. Include the mushroom mixture with flour and 1/4 tsp salt and cook for about 30 seconds, stirring constantly.
  12. Include the broth into the pan, bring it to a boil, and cook for about 2 minutes.
  13. Remove the pan from the stove, add thyme and butter, and stir to melt the butter.
  14. Pour the sauce over the chicken breast and serve.
