  • Milk, ½ cup
  • 3 eggs
  • Water, ½ cup
  • Sifted confectioners’ sugar, 1 ¼ cup
  • Lemon juice, 1 tbsp
  • Lemon zest, 1 tsp
  • Butter (melted), 3 tbsp
  • Vanilla extract, ½ tsp
  • All-purpose flour, ¾ cup
  • Heavy cream (whipped), 1 cup
  • Salt, ½ tsp
  • Strawberries (sliced), 4 cups
  • Cream cheese (softened), 1 package


  1. Place milk, water, eggs, flour, melted butter, and salt in the blender. Process until smooth.
  2. Blend lemon juice, confectioners’ sugar, lemon zest, cream cheese and vanilla using an electric mixer. Blend until smooth. Stir in whipped cream.
  3. Heat a non-stick skillet or griddle over medium heat. Scoop the batter on the griddle. Rotate the pan to spread the batter thinly on the bottom of the pan. Cook for a minute and flip over. Continue cooking until the crepe is cooked. Remove and place on a platter. Cover with damp towel while you prepare the rest of the crepes using the batter.
  4. When all crepes are ready serve each with cream cheese and strawberries. Roll up the crepes and top with more cream cheese and strawberries. Serve immediately and enjoy!
