If you love the crunchiness of croutons but want to limit your gluten intake, try this chicken tostada salad. Fried corn tortillas provide a satisfying crunch.

Ingredients

  • 1 can of black beans, drained
  • 2 cups of fresh corn kernels
  • 2 cups of cherry tomatoes, halved
  • 4 canned green chilies, chopped
  • 1 cup of corn oil
  • 4 corn tortillas, halved
  • 1 small head of romaine lettuce, chopped
  • 2 cups of shredded chicken
  • 1 avocado, sliced
  • Fresh cilantro and green onion for garnish

Directions

Pan fry tortilla halves in corn oil and drain on paper towels.

Top with all remaining ingredients, saving lettuce, chicken, and avocado for last, then serve with a lime vinaigrette or southwestern-style dressing.
