This recipe is the perfect combination of the crispiness of cucumbers, the creaminess of avocados, and the deliciousness of white beans. If you are too tired of taking salads to work, this smashed white bean and avocado sandwich can be a good replacement.

The best part about this sandwich is that it can be made in little time, which means that you don’t need to wake up too early.

Ingredients

  1. 5 ounces sprouts
  2. 1 small red onion (thinly sliced)
  3. 2 cans of 15 ounce white beans (rinsed and drained)
  4. Salt and pepper to taste
  5. 2 avocados (pitted and thinly sliced)
  6. 8 slices multi-grain bread (toasted)
  7. 1 cucumber (thinly sliced)
  8. Juice of half lemon
  9. 2 tablespoons extra virgin olive oil

Preparation

  1. In a medium bowl, add together olive oil, lemon juice, and beans.
  2. Combine the ingredients and smash them so that it has a paste-like consistency with small chunks only.
  3. Season the paste with salt and pepper.
  4. Spread the bean paste equally among four slices of bread.
  5. Now place red onion, avocado, cucumber, and sprouts over it.
  6. Add some more salt and pepper and top the sandwiches with the remaining slices of bread.
  7. Pack in your lunch box and enjoy a delicious and refreshing meal at work.
