Ingredients

  • ½ teaspoon cumin
  • 250g halved cherry tomato
  • Finely sliced small red onion
  • 2 peeled and stoned avocados
  • Two 400g cans of rinsed and drained beans of your choice
  • High-quality dressing of your choice
  • a large bunch of roughly chopped coriander leaves
  • 4 eggs
  • Finely sliced and deseeded red chili

Preparation

  1. Place the eggs in boiling water and boil for 6-7 minutes.
  2. Once done, cool them in a bowl of cold water.
  3. In a large bowl, add beans, tomatoes, onion, coriander, and sliced avocados.
  4. In a small bowl, add 3 tablespoons of the dressing and mix in chili and cumin in it.
  5. Now, begin peeling off egg shells and cut the eggs into quarters.
  6. Add the salad into the dressing and mix well.
  7. Add the eggs into the bowl as well.
  8. Place this dressing into the lunch box and enjoy at lunch.
