Ingredients

4 egg yolks
2 tablespoons water
1 tablespoon white wine vinegar
1 1/2 cups olive oil
Pinch ground white pepper

 

Directions

Combine egg yolks, water, and vinegar in a food processor or blender and pulse slowly. Drizzle in olive oil, taking care not to add too much at once.

Transfer mixture to a double boiler and heat until the temperature reaches 160 degrees Fahrenheit.
