We’re guilty of hiding out in the corner at parties, dipping chip after chip in the spinach artichoke dip. That’s why we love these spinach artichoke quesadillas.
Ingredients
- 8 tortillas
- 1 cup of spinach artichoke dip
- 2 cups of shrimp, cooked and chopped
- 2 cups of mozzarella cheese, shredded
Directions
- Place ingredients on each tortilla, stopping about half an inch before the edges so the filling doesn’t ooze out.
- Place quesadilla in a quesadilla maker and follow the instructions, or heat both sides until browned in a skillet drizzled lightly with olive oil.
