Chicken tortilla soup warms you up on a cold day, but it’s also a popular summertime meal. Make it in a crockpot or slow cooker for a hassle-free dinner that’s ready when you get home from work or school.


  • 4 cups of shredded chicken
  • 3 cups of chicken broth
  • 1 can of tomato sauce
  • 1 can of salsa, any variety
  • 2 cloves of garlic, chopped
  • 1 small yellow or white onion, chopped
  • 1 cup of corn
  • 1 cup of black beans
  • ⅛ cup of fresh cilantro
  • Salt and pepper, to taste


  1. Heat on high for 2 hours or low for 4 to 6 hours in a slow cooker.
  2. Garnish with sour cream and shredded cheese.
