Sweet potatoes stuffed with pulled pork are an excellent alternative to pulled pork sandwiches for folks on a low-carb or gluten-free diet.

Ingredients

  • 4 large sweet potatoes
  • 1 sweet onion, diced
  • Pulled pork, either homemade or from a deli
  • Barbecue sauce, to taste

Directions

  1. Bake sweet potatoes for approximately 1 hour at 400 degrees Fahrenheit.
  2. Stuff with pork and onions, then drizzle with barbecue sauce.
