We love recipes for stuffed peppers because they’re always easy and delicious. If you want extra protein in your stuffed peppers recipe, add chicken, turkey, or hamburger.


  • 4 bell peppers, any color
  • 1 can of black beans, drained
  • 1 cup of rice
  • 1 cup of cheese
  • 15 olives, sliced
  • 2 cloves of garlic, smashed
  • 1 small onion, diced
  • 1/2 cup of sour cream
  • 1 tablespoon of olive oil
  • Salt and pepper, to taste


  1. Prepare rice according to the directions on the package. During this time, saute onions and garlic in a skillet drizzled with olive oil.
  2. Combine all ingredients inside of peppers with the tops removed, saving the cheese for last.
  3. Bake for 30 minutes at 400 degrees Fahrenheit.
