3) Sauteed Spinach With Basil                      (3 of 5)





  • 2 teaspoons olive oil
  • 4 cloves garlic, thinly sliced
  • 1/3 cup pine nuts
  • 10 ounces fresh spinach leaves
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 cups fresh basil leaves



Heat the oil in a large skillet over medium-low heat. Add the garlic and cook for 2 minutes. Add pine nuts and cook until lightly golden. Then put heat to medium and add the spinach, salt, pepper, and 2 tablespoons of water. Toss occasionally with tongs, until the spinach wilts, about 4 minutes. Remove from pan. Add basil and toss.
