If you’ve got family members who claim they hate carrots, serve honey-glazed carrots as a side dish. The honey sweetens the carrots without overpowering them.

Ingredients

  • 1 tablespoon of vegetable oil
  • 2 pounds of carrots, cut into 1-inch pieces
  • 1 cup of chicken broth or water
  • 1/2 cup of honey
  • 2 tablespoons of red-wine vinegar
  • Salt and pepper
  • 2 tablespoons of unsalted butter

Preparation

  1. Heat oil over medium-high heat in a skillet, then add carrots. Cook for about 2 minutes, stirring once.
  2. Add all ingredients except butter. Bring carrots to a boil, then reduce to a simmer and cover. Cook for 7 to 9 minutes.
  3. Add butter to the cooked carrots and season with additional salt and pepper, if desired.
