  1. 1 1/2 cups of ribs of celery (cut at a base)
  2. 1 1/2 cups onion (finely sliced)
  3. 1 lb of leftover roast turkey meat (coarsely torn into small pieces)
  4. 1 roast turkey carcass (sliced into coarse chunks)
  5. 1/2 cups carrots (diced)
  6. 1/2 lb. chunk of bacon (sliced into 1/2 pieces)
  7. 2 bay leaves
  8. 2 qt. of low-sodium chicken stock
  9. 2 thyme sprigs
  10. 3 tbsp of parsley leaves (chopped)
  11. Black pepper
  12. Salt


  1. Combine all the leftover turkey parts, chicken stock, thyme springs, and bay leaves into a large pot.
  2. Place the large pot over high heat, bring to a boil, and decrease heat, cooking it for about an hour
  3. Strain the chicken broth into a pan and remove and throw away the solids
  4. Add onions, celery, carrots, and bacon to the pot
  5. Allow all of the ingredients to simmer and cook for about 10 minutes or until the vegetables soften
  6. Add all the leftover turkey parts, season them with black pepper and salt, and stir in parsley
  7. Serve
