Ingredients

Servings: 4 

  • 1 can cream of undiluted chicken soup (condensed, low fat, and low sodium)
  • 1 cup of onion (chopped)
  • 1 cup of red bell pepper (chopped)
  • 1 cup of sharp cheddar cheese (divided, shredded, and low fat)
  • 1 packet of low-fat 2%cottage cheese
  • 1 tbsp of fresh oregano (chopped)
  • 1 tsp of olive oil
  • 1/2 cup of fresh Parmesan cheese (divided and grated)
  • 1/2 cup of low-fat 2% milk
  • 1/4 tsp of black pepper
  • 2 cups of chicken breast (shredded, roasted, skinless, and boneless)
  • 3 cups of fresh spinach (chopped)
  • 3 cups of mushrooms (thinly sliced)
  • 4 cups of cooked penne
  • Cooking spray

Preparation

Total time: 45 minutes

  1. Preheat your oven at 425 degrees Fahrenheit
  2. In a cooking spray coated skillet, heat oil over medium high heat
  3. Add onion, bell pepper, mushroom, and cook for about 4 minutes
  4. Add oregano, spinach, black pepper, and cook for about 3 minutes
  5. In a food processor, put the cottage cheese and process
  6. Add the spinach mix, pasta, cottage cheese, chicken, 1/4 cup of Parmesan, milk, 3/4 cup of cheddar cheese, and soup in a bowl
  7. Place the mix into a cooking spray coated baking dish (2 qt.)
  8. Sprinkle the rest of the Parmesan and cheddar cheese, bake for about 25 minutes, and serve
