This one’s a terrific chicken recipe with refreshing summery flavors. Prepare the marinade and don’t forget to squeeze the grilled lemon on top for best flavors.

Ingredients

  • Lemon zest (grated), 1 tbsp
  • Lemon juice (freshly squeezed), 1/3 cup
  • Fresh oregano (finely chopped), ¼ cup
  • Olive oil, 2 tbsp + more
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Chicken breast fillets, 2 lbs
  • 4 medium-sized lemons, halved crosswise
  • Fresh oregano sprigs, for garnish

Directions

  1. Start with preparing the marinade. Whisk lemon juice and zest in a bowl. Stir in oregano, oil, salt and pepper and whisk to mix well. Add the marinade to a large re-sealable plastic bag along with the chicken fillets. Seal and shake to coat well. Let sit for at least 30 minutes in room temperature before grilling the chicken.
  2. To prepare, set the grill to preheat setting and grease with oil. Remove chicken and pat dry. Place it on the grill and cook for 8-10 minutes undisturbed on one side until cooked. Turn and continue cooking until it is fully cooked. Remove and place it on a platter. Slice if you like. Cover with a foil and let rest.
  3. Meanwhile, place lemon halves on the preheated grill and cook for a few minutes until slightly charred.
  4. Serve chicken with grilled lemon on the top. Garnish with oregano sprigs and serve warm for best flavors.
