  • Sea salt, to taste
  • Pepper, to taste
  • 2 pieces of multigrain bread, toasted
  • 2 eggs, cooked sunny-side up
  • 1 teaspoon lemon juice
  • 1 ripe avocado


  1. Cut the avocado lengthwise, peel and remove the pit.
  2. Now scoop out the fruit and mash it using a spoon.
  3. Combine lemon juice into mashed avocado.
  4. Now toast the bread slices using butter or olive oil.
  5. Cook your eggs.
  6. Spread mashed avocado on top of your bread slices and place your egg on top.
  7. Do the same for the second slice.
  8. Garnish the egg with salt and pepper to taste.
