Love muffins but need something to replace your regular varieties? Try these antioxidant-rich pomegranate oatmeal muffins.

Ingredients

Wet

  • 2 eggs
  • ⅓ cup of pomegranate juice
  • 1 teaspoon of vanilla extract
  • 1 banana
  • ½ cup of almond milk
  • 2 tablespoons of coconut oil

Dry

  • 2 cups of quick cooking oatmeal
  • 1 teaspoon of baking powder
  • ½ cup of pomegranate arils, separated

Directions

  1. Preheat oven to 350 degrees Fahrenheit and grease or spray a muffin tin.
  2. Mash banana in a bowl, then add remaining wet ingredients.
  3. Add dry ingredients and stir gently, then pour into muffin tins.
  4. Bake for 17 to 20 minutes. Top with additional pomegranate arils, if desired.
