Ingredients

  • 1 tbsp of olive oil
  • 1 cup of onion (chopped)
  • 1 tsp of ground fennel
  • 1/2 tsp of ground coriander
  • 2 cloves of garlic (crushed)
  • 1 thyme sprig
  • 1/2 tsp of orange rind (grated)
  • 1/4 tsp of saffron threads (crushed)
  • 1 1/2 cups of water
  • 1 1/2 cups of clam juice
  • 1 can of tomatoes (diced and undrained)
  • 1/8 tsp of salt
  • 1 pound of flounder fillet (cut into 2-inch pieces)
  • 1 can of Northern beans (rinsed and drained)
  • Thyme leaves

Preparation

  1. In a Dutch oven, heat the oil over medium-heat.
  2. Add fennel, garlic, onion, thyme sprig, coriander, and sauté it for about 5 minutes.
  3. Add in saffron, rind, water, tomatoes, and clam juice.
  4. Bring it to a boil, decrease the heat, and allow it to simmer for about 5 minutes.
  5. Stir in fish, beans, salt, and cook it for about 5 minutes.
  6. Garnish it with thyme leaves and serve.
