This delicious soup will make your mouth water and make you crave for one more serving. People of all ages can enjoy slurping this soup.

You need to prepare this at your next dinner party for both adults and kids to enjoy.

Ingredients

  1. 4 red potatoes
  2. 2 tsp of olive oil
  3. 1/2 cup of onion (chopped)
  4. 1 1/4 cups  of chicken broth (fat and sodium-free)
  5. 3 tbsp of all-purpose flour
  6. 2 cups of low-fat 1% milk (divided)
  7. 1/4 cup of low-fat sour cream
  8. 1/2 tsp of salt
  9. 1/4 tsp of black pepper
  10. 3 slices of bacon (halved)
  11. 1/3 cup of cheddar cheese (shredded)
  12. 4 tsp of green onions (sliced)

Preparation

  1. Use a fork to pierce a potato.
  2. Microwave it on High for about 13 minutes.
  3. Cut the potato in half and allow it cool.
  4. In a pan, heat the oil over medium-high heat.
  5. Add onions and sauté them for about 3 minutes.
  6. Add broth.
  7. In a bowl, combine 1/2 cup milk and flour and add to the pan containing 1 1/2 cups of milk.
  8. Bring it to a boil, stir, and cook for 1 minute.
  9. Take it off from heat, stir in salt, black pepper, and sour cream.
  10. Place bacon on plate, cover it with a paper towel, and place it in the microwave on high for about 4 minutes.
  11. Crumble the bacon.
  12. Remove the potato skin and discard.
  13. Mash the potatoes and place them in the soup.
  14. Top the potatoes with onions, cheese, and bacon.
  15. Serve.
