Simple Spinach Soup

Soups don’t necessarily have to be complicated and packed with ingredients that are not easily available in your pantry. This Spinach Soup is for one of those winter nights when you don’t feel like doing too much work. It is simple and takes only a little time to get prepared.

Ingredients

  • 1 large dollop of crème fraiche (optional)
  • Drizzle of olive oil
  • 5 baby potatoes, roughly chopped
  • 3 carrots, roughly chopped
  • 260 g spinach
  • 2 tablespoons tomato chutney
  • 2 red onions, roughly chopped
  • 2 cloves of garlic, roughly chopped
  • 1 l of water
  • 1 teaspoon red chili flakes
  • 1 tablespoon butter
  • 1 herb seasoning paste of your choice

Preparation

  1. Heat oil in a pan over medium heat and add onions.
  2. Let the onions cook until they are tender and golden.
  3. Add garlic and sauté until softened.
  4. In a separate pot, boil 1 liter water.
  5. While the water is boiling, add carrots, potatoes, butter, and chili flakes into the pan with garlic and onions.
  6. Once the water is boiled, add it to the pan along with the herb seasoning paste.
  7. Boil the mixture for 5 minutes and add the spinach and the chutney into the pan.
  8. Let the mixture simmer until the potatoes are cooked through.
  9. Let the soup cool for a few minutes and then blend it.
  10. Pour into soup bowls and spoon out 1 dollop of crème fraiche and serve.
