Want to melt away those winter blues? This Beef and Barley Soup recipe is perfect to make you feel cozy on a chilled winter night. The best thing about this soup is that it is a complete meal with the beefy chunks in it.

Ingredients

  • 900 ml carton no-salt beef broth
  • 796 ml can diced tomatoes, drained
  • 300 g beef tenderloin grilling steak, cut into small cubes
  • 227 g package cremini mushrooms, quartered
  • 2 teaspoons dried oregano leaves
  • 2 garlic cloves, minced
  • 2 bay leaves
  • 1/2 teaspoon salt
  • 1/2 cup pearl barley
  • 1 tablespoon olive oil
  • 1 onion, chopped

Preparation

  1. Place a large pot over medium-high heat and add oil in it.
  2. Now add onion and garlic to the pot and cook until soft.
  3. Add bay leaves, oregano, mushrooms, tomatoes, and barley, and cook for 3 minutes or until the mushrooms are soft.
  4. Add beef, broth, and salt into the pot and bring to a boil.
  5. Reduce the heat to medium-low and simmer while partially covering the pot.
  6. Let the barley get tender.
  7. Remove the soup from heat and discard bay leaves.
  8. Serve in soup bowls and enjoy with bread.
