  • Breadcrumbs, ½ cup
  • Butter (unsalted), 3 tbsp divided use
  • Thyme leaves, ½ tsp
  • Sharp cheddar cheese (shredded), 1 ½ cups
  • Monterey Jack cheese (shredded), 1 cup
  • Fusili pasta, 1 cup
  • Cornstarch, 1 tbsp
  • Evaporated milk, 1 can of 12 oz.
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • Paprika, 1 tsp
  • Garlic powder, ½ tsp
  • Onion powder, ½ tsp
  • Cayenne pepper ½ tsp
  • Oregano, ½ tsp
  • Dried Thyme (ground), ½ tsp


  1. Start with preparing the seasoning. Mix paprika, garlic powder, onion powder, cayenne pepper, oregano, dried thyme, salt and pepper in a small bowl. Set aside.
  2. Place a skillet over med-high heat. Add butter and let melt. Add breadcrumbs and cook for 2 minutes until toasted and browned. Add thyme, stir and set aside.
  3. In another large bowl, add cornstarch and cheeses and stir to combine well.
  4. Prepare the pasta following the package instructions. Drain and place it back on the stove. Stir in evaporated milk, cheese mixture and seasoning. Adjust salt and pepper if required. Combine and let the cheeses melt completely for 2-3 minutes.
  5. Top with toasted breadcrumbs and serve warm for best flavors.
