This creamy quesadilla is a perfect recipe to enjoy the creamy and crunchy flavors together. The best part is that this amazing recipe can be prepared in just 30 minutes. The no-fuss quesadillas can be prepared 30 minutes before your dinner time for best flavors.

Ingredients

  • Olive oil, 1 tbsp
  • Ground beef, 1 lb
  • Taco seasoning mix, 1 tbsp
  • Green chiles (drained, chopped), 1 can
  • Tortillas for burritos, 8 tortillas 8 inch each
  • Refried beans (heated), 1 can
  • 2 medium-sized avocados (peeled, halved, sliced)
  • Fresh cilantro leaves (chopped), 2 tbsp
  • Mozzarella cheese (shredded), 2 cups

Directions

  1. Set the oven to preheat at 400 degrees F. Prepare a baking sheet with parchment paper.
  2. Place a skillet over med-high heat. Add oil. Add ground beef and cook for 3-5 minutes until browned. Stir frequently. Drain excess fat and stir in green chiles and taco seasoning. Set aside.
  3. Top tortilla with beef mixture, refried beans, mozzarella, and avocado. Cover with another tortilla. Repeat to prepare 4 quesadillas.
  4. Place the quesadillas on the baking sheet and set to bake for 8-10 minutes until browned and cheese has melted.
  5. When done, remove from oven and garnish with cilantro. Serve immediately for best taste!
