4) Pasta With Peppers And Cheese    (4 of 5)





  • 12 ounces short pasta (such as gemelli or penne)
  • 1/4 cup extra-virgin olive oil
  • 2 red bell peppers, sliced
  • 2 cloves garlic, minced
  • 2 bunches arugula, thick stems removed
  • 12ounces bocconcini (small balls of fresh mozzarella), cut in half, or fresh mozzarella, cut into bite-size pieces
  • Salt and pepper



  1. Cook pasta according to the package directions.
  2. Reserve ½ cup of the cooking water, drain the pasta, and set aside.
  3. Rinse pot.
  4. Heat olive oil in the pasta pot over medium heat.
  5. Add bell peppers and garlic. Cook; stirring occasionally, until the peppers are tender.
  6. Add the arugula, bocconcini, cooked pasta, reserved pasta water, salt and pepper.
  7. Cook, stirring, about one minute.
