Watermelon popsicles made from real watermelon and fresh kiwi are the ultimate summer treat.


19 oz cubed seedless watermelon (about 3 1/2 cups)
5 1/2 tablespoons granulated sugar, divided
1 tablespoon fresh lemon juice
1/2 cup canned coconut milk, shaken
6 medium kiwi fruits
1 tablespoon mini chocolate chips


Add watermelon, 2 Tbsp granulated sugar and lemon juice to a blender and blend until well pureed, then skim off foam. Pour mixture into 10 popsicles molds, filling each about ⅔ of the way full.

Sprinkle the chocolate chips over tops, then place lids on molds and insert sticks. Freeze for 3 1/2 hours.

During last 30 minutes of popsicles freezing, whisk together coconut milk with 1 1/2 Tbsp sugar until sugar has dissolved, then chill 30 minutes.

Add chilled coconut milk to popsicles and return to freezer, uncovered. Chill for 45 minutes.

Puree kiwi flash with remaining granulated sugar and freeze for 2 to 3 hours.
